Mardi Gras for Fat Tuesday

Par-tay! Oh, wait. That was Sunday. Super Eric's Birthday Bowl Sunday. Can we say Fat Sunday? How about whipped cream walnut cake with fudge tracks ice cream? How about chips and cheese sauce? That cake is really too good.

Here's the recipe:

2 C cake flour, sift, remeasure 2 C

Resift twice with
2 3/4 teaspoons double-acting baking powder
1 1/3 C sugar
3/4 teaspoon salt

Stir in
3/4 C ground walnuts
1 C chopped walnuts

Whip until stiff
1 C cold whipping cream
Add gradually, stirring until smooth
1/2 C water
1 1/2 teaspoons vanilla

Whip until stiff but not dry
3 egg whites
Combine the cream and the egg whites. Fold dry ingredients into the cream mixture about a third at a time. Bake in greased 9-inch pans at 350 degrees Fahrenheit for 25 minutes. Cool slightly, remove from pans carefully. Cool completely.

Frosting:
Combine 1 C whipping cream, maple syrup to taste (about 1/2 C), and a dribble of vanilla. Whip until stiff.

Assembly:
Frost bottom layer heavily. Place a layer of chopped walnuts between the layers. Frost the rest of the cake heavily. Yes, heavily. Thick, thick cream.

oh, and i found that a small green salad before dinner helps fill me up.

I can't help it. It's the combo of the weight report and the cake recipe all together that's cracking me up. Man, that cake sounds good.

Way to go on the weight. You're doing great.

It's very evil to post a tasty recipe like this. Anything with whipped cream in it ought to be outlawed. I feel myself compelled now to eat something very sweet and smooth.

Laurie, when I eat salad, it tends to be all I eat. It's so good, I keep having more. Sunday was definitely not a salad day. Birthday cake for lunch, chips for dinner, stomachache for two days.

RC, I just realized that Jules would go on a Royal Crown. Anyway, the cake and the diet in one blog day was quite deliberate. Aren't you so pleased with me that I still managed to lose some weight? I'm so pleased with me.

Not like Heidi who keeps puking at me for writing about my weight. So she can puke and I can starve and we'll rename ourselves Mary-Kate and Ashley. Which one do you want to be?

Do you know? I haven't barfed since 1986. I was at my brother Clint's house in Provo and had made the mistake of eating the airplane breakfast. Ugg-lee.
